Ingredients
- 75 ml warm water
- 2 envelopes baker's yeast
- 650 g flour
- 0.5 cups warm milk
- 155 g sugar
- 4 eggs
- 3 egg yolks
- 1 tsp vanilla sugar
- 150 g softened butter
- 1 tbsp butter
- 1 tsp salt
- 300 g chocolate chips
- 150 g nuts
- 150 g raisins
- 1 orange grated skin
- 1 tbsp cream to mount

ELABORATION:
Step 1
Pour the
warm water into a bowl, add an envelope of yeast and stir until completely
dissolved. Add a cup of flour, mix and let stand 30 minutes.
Step 2
Pour the
warm milk into another bowl, add the remaining yeast envelope, mix and let
stand 10 minutes. Meanwhile, in a large bowl, beat the eggs and two yolks with
the sugar and vanilla sugar. Add the milk and yeast mixture, and stir until
integrated.
Step 3
Cut 150 g
of butter into small cubes, arrange them in a large bowl together with a level a teaspoon of salt and the remaining flour, and knead a few minutes. Add the egg
mixture and continue kneading until a homogeneous preparation.
Step 4
Add the first mixture of yeast and knead, about 10 minutes, with an electric mixer,
until an elastic dough is obtained.
Step 5
Add the
chocolate chips, orange zest, nuts and raisins, and knead a little more to
integrate all the ingredients. Pour the dough into a bowl smeared with butter and
let stand for 2 hours. Spread a panettone mold with butter, pour the dough,
cover with a cloth and let stand between 45 minutes and 1 hour.
Step 6
Preheat
the oven to 210 °. Paint the surface of the dough with the whipped cream and
remaining yolk, sprinkle a handful of granulated sugar on top and bake the
panettone for 15 minutes. Lower the oven temperature to 170 ° and continue
cooking for another 45 minutes.
